ICBINB Cookie Recipe

This recipe was sent to me by KSG (I believe it originated from her sister) and OHMgosh they are goooood.  I really don’t like white chocolate (or craisens) so I was extremely hesitant about making these, but they were SO good!  The combination of the two together are phenomenal.

Meg’s master recipe for white chocolate chip craisin cookies:


2 1/2 cups plus one tablespoon flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) I Can’t Believe It’s Not Butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz package) white chocolate chip morsels (Nestle or Ghiradelli – Ghiradelli is better but it’s more expensive)
Half of a 12 oz package of Craisins (about 1 cup) (or more if you want them really craisin-y)

Preheat oven to 375 degrees

Combine flour, baking soda, and salt in a bowl.

Beat butter, granulated sugar, brown sugar, and vanilla extract in a large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in the flour mixture. Stir in morsels and Craisins.

Refrigerate the dough for a few minutes if it’s too soft. Drop onto baking sheets lined with parchment paper.

Bake for 12 minutes, or until golden brown. Cool on baking sheets; remove to wire racks to cool completely.


Note: the cookies I baked aren’t burnt… for some reason the flash darkened them… let me tell you… they were the best things I’ve ever eaten!  I’m dying to make more! Anyone need some cookies?!
